Chardonnay picked at optimal ripeness with bright acidity was whole-cluster pressed and carefully handled so as not to oxidize the juice—also known as the 'green school' method of white winemaking. This method and the stainless-steel tanks it was fermented and aged in are intended to preserve and accentuate the bright fruit aromatics and minerality.
